This dish is both easy to prepare and very flavorful, making anyone feel like a chef. It has all the elements that make me feel like summer is here, namely grilled meat, bright fresh vegetables and herbs. It’s like bringing a little piece of the Italian country side to your table without spending the entire day in the kitchen.
Steak and Panzenella
Skirt steak 8oz
Cherry tomato ½ cup
Chives 1tablespoon sliced in matchsticks
Sherry vinaigrette½ tablespoon
Extra virgin olive oil1tablespoon
Feta cheese 2tablespoons
Scallions 1 oz charred on grill then chopped
Salt + pepperas needed
Step 1. Season steak with salt and pepper, grill to desired temperature, rest (very important step, a good rule is half the time you spent cooking the steak), then slice steak thin on a bias.
Step 2. Toss cubes of bread in extra virgin olive oil and salt bake in oven at 400 degrees until golden brown
Step 3. Toss tomatoes in oil and blister under you ovens broiler for 3-5 minutes
Step 4. Mix all ingredients together and top sliced steak
Step 5. Finish with coarse sea salt and extra virgin olive oil
