Michael Chen is the sous chef of Yellowtail – Bellagio and the reigning champion of World Chef Challenge (held at the World Food Championships). To achieve this title all he had to do was overcome 20 of the country’s best chefs during three days of competitions covering a signature dish face-off, knife skills challenge and a “mystery ingredient” final in which he had to win over the notoriously critical WFC panel of judges.
